Creamy Double Decker Fudge

What could be better than peanut butter and chocolate? Well, something quick and easy works for me. How about for you?
This recipe comes from the folks that give us REESE’S and EAGLE BRAND. Sometimes the very best recipes come from folks trying to seel us their products. I sure don’t mind -- especially when I use their products anyway.
Creamy Double Decker Fudge

1 cup REESE’S Peanut Butter Chips
1 (14-oz) can EAGLE BRAND Sweetened Condensed Milk (NOT evaporated milk), divided
1 teaspoon vanilla extract, divided
1 cup HERSHEY’S Semi-Sweet Chocolate Chips
Line 8-inch square pan with foil.

In small microwave-safe bowl, place peanut butter chips and 2/3 cup sweetened condensed milk. Microwave on HIGH 1 to 1 ½ minutes, stirring after 1 minute, until chips are melted and mixture is smooth when stirred. Stir in ½ teaspoon vanilla; spread evenly into prepared pan.

In microwave-safe bowl, place remaining sweetened condensed milk and chocolate chips. Microwave on HIGH 1 to 1 ½ minutes, stirring after 1 minute, until chips are melted and mixture is smooth when stirred. Stir in remaining ½ teaspoon vanilla; spread evenly on peanut butter layer. Cover; chill until firm.

Cut into 1-inch squares. Cover; store in refrigerator.

Makes about 1 ½ pounds.

White Chocolate Fudge

This is another great recipe from the folks over at Kraft. I would love to try this with the variation using red and green candied cherries rather than the cranberries. Perfect for Christmas!
 
Also, I'll substitute pecans for the almonds. I love almonds but we have pecans in abundance here in the Deep South.
 
One of the things I love so much about Kraft recipes is that they always includes tips, such as using red and green candied cherries. Or telling us what to do with that leftover sweetened condensed milk. Be sure to check out their website for more great recipes and tips.
 
White Chocolate Fudge

2 pkg. (6 squares each) BAKER'S White Chocolate
3/4 cup canned sweetened condensed milk
1 cup coarsely chopped PLANTERS Almonds, toasted
1/2 cup dried cranberries
1 Tbsp. orange zest
 
LINE 8-inch square pan with foil, with ends extending over sides. Microwave chocolate and milk in microwaveable bowl on HIGH 2 to 3 min. or until chocolate is almost melted; stir until completely melted.
ADD remaining ingredients; mix well. Spread into pan. Refrigerate 2 hours or until firm.
USE foil handles to lift fudge from pan before cutting to serve.

What To Do With Leftover Sweetened Condensed Milk
Store leftover sweetened condensed milk in tightly covered container in refrigerator up to 1 week. Serve over cut-up fruit or hot cooked oatmeal. Or for extra flavor, stir into your cup of hot brewed coffee or tea instead of regular milk.
 

Two-Layer Fudge

The Kraft foods website has some of the best recipes around. This is one of theirs. I needed a recipe that used white chocolate and semi-sweet chocolate. What can I say? The grocery store had a huge after-Christmas sale on chocolate. I couldn't pass it up. Besides, who needs an excuse to create something yummy? I copies the recipe from the Kraft site however I prefer pecans over walnuts. It's what we do in the South.

Two-Layer Fudge

makes 24 servings

1 pkg. (8 squares) BAKER'S Semi-Sweet Chocolate
1 can (14 oz.) sweetened condensed milk, divided
1/2 cup chopped PLANTERS Walnuts
1 tsp. vanilla
1 pkg. (6 squares) BAKER'S White Chocolate


MICROWAVE semi-sweet chocolate and 3/4 cup milk in medium microwaveable bowl on HIGH 2 minutes or until chocolate is almost melted, stirring after 1 minute. Stir until chocolate is completely melted.

ADD nuts and vanilla; mix well. Spread onto bottom of foil-lined 8-inch square pan. Set aside.

MICROWAVE white chocolate and remaining milk in medium microwaveable bowl on HIGH 1-1/2 minutes or until chocolate is almost melted, stirring after 1 minute. Stir until chocolate is completely melted. Spread over semi-sweet chocolate layer.

Refrigerate 2 hours.

Kraft Kitchens Tips Special
Prepare and refrigerate as directed above. Place 1 additional square BAKER'S Semi-Sweet Chocolate in small resealable plastic bag; seal bag. Microwave on HIGH 1 minute or until chocolate is melted. Fold down top of bag tightly; snip tiny piece off bottom corner of bag. Holding top of bag tightly, drizzle chocolate through opening over uncut fudge. Let stand until set.

This is another one of those wonderful recipes companies give us so we'll (hopefully) use their products. Okay. It worked. This is a recipe for some serious chocolate!

Toll House Famous Fudge

1 1/2 cups granulated sugar
2/3 cup (5 oz.) Carnation Evaporated Milk
2 tablespoons butter or margarine
1/4 teaspooon salt
2 cups miniature marshmallows
1 1/2 cups (9 oz.) Nestle Toll House Semi-Sweet Chocolate Morsels
1/2 cup chopped pecans or walnuts (optional)
1 teaspoon vanilla extract

Line 8-inch-square baking pan with foil.

Combine sugar, evaporated milk, butter and salt in medium, heavy-duty saucepan. Bring to a full rolling boil over medium heat, stirring constantly. Boil, stirring constantly, for 4 to 5 minutes. Remove from heat.

Stir in marshmallows, morsels, nuts and vanilla extract. Stir vigorously for 1 minute or until marshmallows are melted.

Pour into prepared pan; refrigerate for 2 hours or until firm. Lift from pan; remove foil. Cut into pieces.

Makes 49 pieces.
