Ham, Cheddar and Broccoli Quiche

Do you like Quiche? Some folks do. Some folks don't. I happen to be one who does. While everyone else it seemed was eating Chicken Salad at JaDa's, I was always the one ordering Quiche. JaDa's closed so now I have to make my own. That's okay.

This recipe comes from the holiday recipe guide from Publix. It was in the newspaper and I kept it, carefully putting it aside until I had time to try the recipes. I found it piled under some things. Imagine that?!

Ham, Cheddar and Broccoli Quiche

1 cups Birds Eye SteamFresh Broccoli Florets
5 large eggs (or 1 1/4 cups egg substitute)
1/2 cup half-and-half
1 cup shredded Cheddar cheese
1/2 cup diced, cooked ham
1/2 teaspoon Dijon mustard
1 frozen pie crust

Preheat oven to 375.

Microwave broccoli on HIGH 1 to 2 minutes to thaw; chop into bite-size pieces.

Combine eggs and half-and-half, then stir in remaining ingredients. Pour into pie crust.

Bake 30 to 35 minutes or until set. Let stand 10 minutes before serving.

Makes 8 servings.

Cheesy Ham and Apple Cups

This recipe just looks fun. This is form Pillsbury. Check out their recipes on their website. They've got other recipes similar to this one. I think they would be perfect for the next potluck. What do you think?
 
Cheesy Ham and Apple Cups
 
1  can (12 oz) Pillsbury® Grands!® Jr. Golden Layers® refrigerated buttermilk biscuits (10 biscuits)
1/3  cup sour cream
1/2  teaspoon Dijon mustard
1/4  cup Smucker's® Apricot Preserves
3/4  cup finely chopped cooked ham steak or cooked ham
3/4  cup finely chopped tart apple
3/4  cup shredded sharp white or yellow Cheddar cheese (3 oz)
2  tablespoons finely chopped green onions (2 medium)
Heat oven to 375°F. Spray 10 regular-size muffin cups (2 3/4x1 1/4 inches) with Crisco® Original No-Stick Cooking Spray.
 
Separate biscuit dough into 10 biscuits. On waxed paper, press each biscuit into 3-inch round. Press each dough round in muffin cup.
 
In medium bowl, stir sour cream, mustard and preserves until well blended. Stir in ham, apple, cheese and onions until well blended. Divide ham mixture among muffin cups.
 
Bake 18 to 25 minutes or until edges of biscuits are golden brown. Cool in pan 5 minutes. Serve warm.

Philly Brunch Quiche

I’ve always found that some of the best recipes come from the folks who actually make the products. This recipe is from the Philadelphia Brand Cream Cheese folks. One of my all time favorite recipes comes from them so I can’t wait to give this one a try as well.
“Philly” Brunch Quiche

1 10-inch baked pie crust
1 8-oz. package Philadelphia Brand Cream Cheese, cubed
1 cup milk
4 eggs, beaten
¼ cup chopped onion
1 tablespoon PARKAY Margarine
1 cup finely chopped ham
¼ cup chopped pimento
¼ cup finely chopped green pepper
Dash of pepper

Preheat oven to 350 degrees.

Combine cream cheese and milk in saucepan. Stir over low heat until smooth. Gradually add cream cheese mixture to eggs, mixing until well blended.

Sauté onions in margarine. Add onions and remaining ingredients to cream cheese mixture. Mix well.

Pour into pastry shell. Bake 35 to 40 minutes or until set.

Makes 8 servings.

Ham and Cheese Lasagna

This is a different take on a classic Italian recipe.

Ham and Cheese Lasagna

Cheese Sauce
2 cans (10 3/4 oz) condensed Cheddar cheese soup
1 soup can filled with lowfat milk
1 can (14 1/2 0z) no-salt added diced tomatoes, drained, with large pieces cut up
1 tablespoon dry mustard
1 tablespoon instant minced onion
1/2 cup shredded Cheddar cheese
1/4 cup grated Parmesan cheese

1 tub (15 oz) ricotta cheese
2 large eggs
1/4 cup grated Parmesan cheese
3/4 teaspoon ground nutmeg

12 uncooked, oven-ready lasagna noodles
1 bag (16 oz) frozen chopped broccoli, thawed and pressed dry on paper towels
1 1/2 cups shredded Cheddar cheese
8 oz. thinkly sliced baked Virginia ham
1 jar (12 oz) roasted red peppers, well drained and chopped

Preheat oven to 375 degrees. Lightly coat a 13 x 9-inch baking dish with non-stick cooking spray.

Cheese Sauce
Whisk ingredients in a 2-quart saucepan until blended. Heat, stirring with a whisk, until cheeses melt.

Mix ricotta, eggs, Parmesan cheese and the nutmeg in a bowl until thoroughly combined.

Layer lasagna in prepared baking dish as follows: Spread 1 cup cheese sauce over bottom, top with 4 overlapping noodles, 1/2 the ricotta mixture, the broccoli, 1 1/2 cups cheese sauce and 1/2 cup Cheddar sauce.

Finish with rest of noodles, cheese sauce and Cheddar cheese. Cover tightly with foil.

Bake 50 minutes or until sauce bubbles and noodles are tender. Uncover; bake 10 minutes longer. Let stand 15 minutes before cutting and serving.

Makes 8 servings.

Baked Ham

Has everyone had a wonderful Christmas? I did. I ate my way through. It was fabulous! I've never been one to run around during the holidays telling everyone what I can't eat or even what I shouldn't eat. I choose to eat too much. It's Christmas!!!

One staple of al lSouthern holiday dinners is Baked Ham. I supposed everyone has their own recipe for this. I got mine from my Mother years and years ago. I always used it and people love eating at my house. Well, this year she decided to use a different recipe. I didn't even know that was allowed! I thought there was some kind ofrule that says mothers always have to use the same, good recipes they've always used. The new recipe was fine. But not the same. Christmas is filled with traditions. So here's my recipe for Baked Ham!I know you'll love it!

Baked Ham
Ham -- I prefer the pre-sliced kind
brown sugar
coke -- the real stuff, no diet or cherry flavored allowed

Use two sheets of tin foil to make a "nest" for the ham. Place in a baking pan with at least 2" sides. Put ham in its nest. Place brown sugar on the ham. I pat it all over so that the ham is coated in brown sugar. Pour the coke on top of this. Now you know why you needed a pan with sides on it.

Bake in a 325 degree oven 20 minutes for each pound of ham. Serve warm.

If you're lucky you can use leftovers for sandwiches. Just take sliced ham and place on a croissant. Add mustard, lettuce, cheese. Even tomato, if you must. Watch everyone around you eye your lunch with envy. Enjoy!
